This was an interesting week to the say the least. Packed to the brim with assessments to complete and tests to study for, I wanted something quick and easy, so I decided to cook the transforming furikake gohan, or transforming egg rice. It is presented as a simple recipe – and that it is; apart from creating the chicken stock jelly, or nikogori it only took me an hour. However, I didn’t look at nearly enough recipes, as I was tired, and in a rush… I payed the price for this later on. I gathered my ingredients, deboned the chicken, and placed it into the pot with the other ingredients. I then placed it into the refrigerator, for 3 hours, just like the recipe instructed. It still had not gelatinized. After waiting a few more hours, I realized it probably wasnt going to come together. It turned out less like a flavour filled jelly and more like a clear sauce. Due to the jelly being the main component of the dish, it was pretty flavourless. Disappointed, I ate some of the egg anyway and put the remaining bowl in the fridge for my roommate to eat. It was at this moment I was hit with a wave of determination. Determination not to just call it a night and order ubereats. I still had 600g of chicken wings left, so I decided to fry them in oyster sauce with red wine, mirin, sake, sugar, and green onions, and place them over rice. It was salty, sweet, and pungent (thanks to the onion) and a tasty end to my night.

This was also my first time deboneing chicken wings. In doing this it reminded me why I dont debone chicken wings. Although I couldn’t pull off the dish (or rather failed to actually look at a range of recipes), I believe Soma would have still been satisfied with my alternative (pictured below).
The recipe is as follows:
- 4 x eggs
- 1 tbsp sugar
- Green onions, sliced
- Pinch of salt
- Cooked rice
Chicken Nikogori:
- 7 x chicken wings
- 1 tbsp sesame oil
- 1 tbsp grated ginger
- 700 cc bonito broth
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp sugar
- 50ml soy sauce
- 1-2 TSP OF GELATIN (The recipe I looked at didnt use this… please add this if you want it to turn out decent lol)
